    This Damascus steel boning knife is designed to cut meat, fat and maneuver around the bone and finish the fish. The Damascus steels have a high-end cutter. Built on a Japanese VG10 steel core, wrapped in 67 layers in combination with soft and hard stainless steel. Carbon steel resists corrosion and has a hardness on the unique Rockwell scale. This steel is used because it ensures a high level of purity and quality. The resulting blade is extremely hard and guarantees an exceptionally sharp edge. The surface impresses with a fascinating Damascus motif. The handle is waterproof, antimicrobial and sober. It is made and brilliantly finished up to the last few years. It gives the entire knife a consistency and a unique balance.
