    This good boning knife is designed to move meat, fat and the joints and clean the fish. Damascus plates have extremely precise cutting edges. Built on a Japanese VG10 steel core, wrapped in 67 layers and combined with alternating soft and hard stainless steel. Carbon steel is anti-corrosive and has an unprecedented Rockwell hardness of 60. This steel is used as it ensures a high level of purity and quality. The brochure obtained is extremely hard and guarantees a very lively cutting edge. The surface impresses with a damask pattern in attractive layers. The handle is waterproof, antibacterial and preventive. It is carefully manufactured and carefully sanded to be more sustainable. It gives the knife as a whole exceptional stability and balance.
