While the main task with nakiris is to chop vegetables , they also make excellent choices for many other hashing tasks in the kitchen. They are distinguished by their Japanese shape because they have a straight blade edge that cuts directly on the cutting board without the need to pull or push horizontally. They are also much thinner with taller blades. It is a unique Damask steel blade with a beautiful side of the finished blade made by hand. The blade is surprisingly sharp. It's really impressive to see how easy and effective it is to sharpen. The spine and choir are well done, as is the western white wood touch.
